Steps

Preheat oven to 165ºC. Line 2 cookie trays with baking paper.

Cream the butter and both sugars well; add vanilla, egg & egg yolk beat until light & creamy.

Sift in flour and mix until incorperated.

Fold in white choc chips & cashews. Form balls using a tablespoon & flatten slightly on tray, leave enough space for cookies to spread.

Bake for 15-20 minutes in the oven. Take out when light golden in colour and cool on trays for a few minutes before transferring onto a wire rack.
