Ingredients

  1. 3/4 cupwater or orange juice
  2. 3/4 cupwhite sugar (or less to taste)
  3. 1cinnamon stick
  4. 1orange
  5. 1lemon
  6. 10whole cloves or 1 tablespoon ground
  7. 5cardamom pods or quarter teaspoon ground (optional)
  8. 1bottle (750 ml) red wine, i.e. Cabernet souvignion
  9. 1/2 cupbrandy or rum (optional)
  10. 1coffee or tea filter bag

    Remove zest from lemon and orange using peeler in wide strips. Place zest in large saucepan.

  2. 2

    Juice lemons and oranges and add juice to the pan. Add additional juice to equal about 3/4-1 cup in pan.

    Place cloves and cardamom in small cheese cloth or filter, tie tightly with butchers twine and add to saucepan.

  4. 4

    Add sugar, water, cinnamon sticks, place the pan over high heat and bring to a simmer, stirring to dissolve the sugar.

  5. 5

    Reduce heat to low and continue to simmer, stirring occasionally, until the mixture is reduced by about one-third, about 20 minutes.

  6. 6

    And the red wine and brandy, stir to combine, and bring just to a simmer. Don't let it boil.

  7. 7

    Remove from the heat and remove and discard the spice bundle before serving.
