Heat the oil in a large frying pan, add the onion and garlic and fry gently until soft.

Add the meat and brown on a low heat, stirring occasionally with a wooden spoon. Pour off any excess fat.

Add stock or wine, herbs and seasoning. Cook for further 10 minutes on low heat.

Serve over noodles, in pancakes, on toast or stuffed into any vegetables.
