When having gammon for dinner my mother would always serve it with a ring of pineapple and some cauliflower cheese. This is her cheese sauce recipe which can be used for other things too.

Melt the butter in a small saucepan. Add the flour and mix well until sizzling and cook whilst stirring for 30 seconds.

Add the milk and salt and stir continuously over a high heat until the sauce thickens.

Turn down the heat and add the cheese a small handful at a time, stirring until melted.

Use in a variety of recipes such as a sauce for nachos, macaroni cheese, cauliflower cheese, or serve over steamed cod or grilled beef steak.
