Steps

Place the garlic in a food processor or blender and puree gradually adding olive oil, and white vinegar, until you have a smooth, white paste.

Continue blending and gradually add the sour orange juice. Salt and pepper to taste.

Note: I often add extra garlic if the cloves are smaller. A little cilantro will give it a pale green tiny and give it a little different taste.
