Slice aubergine length ways, sprinkle with salt leave 30 mins

Chop onion add crushed garlic & fry for 5 mins

Add mince to pan, fry until well browned add onion & garlic

Add chopped tomatoes & cinnamon stick, simmer until sauce thickens. Remove cinnamon stick

Fry aubergine in another pan, until browned & soft

In a casserole dish put one layer of aubergine, a layer of mince, & parmesan. top up with white sauce

Repeat until all ingredients used

Pour over white sauce & top with parmesan for last layer. Bake in halogen on 200°F for 40 mins
