Preheat the oven to 500°F, or as high as it goes.

Cut each potato into 5 slices (long-wise). Lay potatoes flat on a baking sheet. Drizzle some olive oil, rosemary, black pepper, parsley, & anything else you desire, on the top & bottom of each potato wedge.

Bake for 15 minutes. Take out of the oven & turn each slice over. Bake for another 15 minutes.

Take out of the oven & let cool for 5 to 10 minutes before serving.
