Ingredients

  1. 1 packages (17.5 oz)sweet potato gnocchi
  2. 1medium onion, diced
  3. 1 lbsausage
  4. 1 clovegarlic, minced
  5. 5 ozfresh baby spinach
  6. 1 cupshredded or shaved parmesan
  7. 1 dashsalt and cracked pepper- to taste

  1. 1

    Remove sausage from casing and form into 1-inch balls

  2. 2

    Place sausage balls in a medium-high skillet and proceed to brown

  3. 3

    Midway through the sausage cooking process add onions to skillet

  4. 4

    As sausage begins to cook through thoroughly add garlic to skillet

  5. 5

    When sausage is cooked through add baby spinach to skillet and begin to wilt

  6. 6

    Cook gnocchi according to package directions and reserve 1/4 cup of boiling water

  7. 7

    Toss cooked gnocchi, 1/4 cup of boiling water into skillet with sausage spinach and onions

  8. 8

    Add 3/4 cup of parmesan to skillet and toss

  9. 9

    Serve immediately garnished with the remainder parmesan
