
spinach artichoke chicken penne

salt a pot of water and cook pasta to al dente

place chicken in pan and pour water to top meat bt do not cover

add bay leaf and bring to boil, then reduce to simmer 10-12 minutes

dice chicken to pieces

heat oil in a large pan over medium heat

melt butter in oil. add onions and garlic. season with salt and pepper and cook 8-10 minutes. stir occasionally.

sprinkle flour over cooked onions and garlic and stir one minute. whisk in wine.

add stock then stir in cream and season with nutmeg.

thicken sauce a couple minutes over low heat and then stir in spinach and artichokes to heat through

melt cheese in mixture

drain pasta and toss with chicken and suace. add cheese again on top and serve
