Ingredients

  1. 1 lbpenne pasta
  2. 2chicken breasts
  3. 1bay leaf
  4. 1 tbspextra virgin olive oil
  5. 2 tbspbutter
  6. 1chopped onion
  7. 4garlic cloves chopped
  8. 1black pepper
  9. 2 tbspflour
  10. 1/2 cupdry white wine
  11. 1 cupchicken stock
  12. 1 cupcream or whole milk
  13. 1/2 tspnutmeg
  14. 1 cupgrated asiago or provolone
  15. 110 oz frozen chopped spinach
  16. 114 oz artichokes drained and chopped
  17. 1freshly grated parmigiano

Steps

  1. 1

    salt a pot of water and cook pasta to al dente

  2. 2

    place chicken in pan and pour water to top meat bt do not cover

  3. 3

    add bay leaf and bring to boil, then reduce to simmer 10-12 minutes

  4. 4

    dice chicken to pieces

  5. 5

    heat oil in a large pan over medium heat

  6. 6

    melt butter in oil. add onions and garlic. season with salt and pepper and cook 8-10 minutes. stir occasionally.

  7. 7

    sprinkle flour over cooked onions and garlic and stir one minute. whisk in wine.

  8. 8

    add stock then stir in cream and season with nutmeg.

  9. 9

    thicken sauce a couple minutes over low heat and then stir in spinach and artichokes to heat through

  10. 10

    melt cheese in mixture

  11. 11

    drain pasta and toss with chicken and suace. add cheese again on top and serve
