Ingredients

  1. 3 eacheggs (beaten)
  2. 2 cupsugar
  3. 1 cupolive oil
  4. 1 cupcarrots (grated)
  5. 1 cancrushed pineapple (20 oz.) - undrained
  6. 2 tspvanilla
  7. 1 tspsalt
  8. 1 tspbaking soda
  9. 3 cupflour
  10. 1 1/2 tspcinnamon
  11. 3/4 cupchopped walnuts (optional)

Steps

  1. 1

    In a large bowl mix

  2. 2

    With a large spoon, stir together well

  3. 3

    Sift together

  4. 4

    Gradually mix flour mixture into egg mixture.

  5. 5

    Add nuts (if desired) and stir.

  6. 6

    Pour into loaf pans.

  7. 7

    Bake at 325° until done, about 1 hour.
