Ingredients

  1. 4.4 lbszucchini (about 2 kg)
  2. 1.1 lbseggplant (about 0.5 kg)
  3. 3.5 ozground beef (about 100 grams)
  4. 2 cupsshort-grain rice (Egyptian rice) (about 400 grams)
  5. Chopped tomatoes
  6. 1 tablespoontomato paste
  7. 1/2 cuphot water (120 ml)
  8. Salt
  9. Black pepper
  10. 7-spice blend
  11. Allspice
  12. Cinnamon
  13. 1/2 cupvegetable oil (120 ml)
  14. Lemon juice

Steps

  1. 1

    Prepare the filling: Rinse the rice. In a bowl, combine the chopped tomatoes, ground beef, rice, 1 teaspoon tomato paste dissolved in water, spices, and oil. Mix well.

    Stuff the zucchini and eggplant with the filling. Place them in a pot with water or beef broth and lemon juice.

  3. 3

    Bring to a boil over high heat, then reduce to low and simmer for 45 minutes to 1 hour.
