I look for anything with a high iron content. Finding beef heart made my day a few years ago. Marinate it long enough and it becomes tender. The texture is similar to beef tongue, which I also love.

I look for anything with a high iron content. Finding beef heart made my day a few years ago. Marinate it long enough and it becomes tender. The texture is similar to beef tongue, which I also love.
Steps

Smash garlic, add to balsamic and olive oil.

Soak beef heart in mixture overnight. Pull out of 'fridge, place into broiling pan and put under broiler on high for 15 minutes.

Turn off broiler. Remove heart and flip, return to cooling broiler for 30 minutes.
- 4
Pull out slice thin, and serve with horseradish sauce!
