  1. 1/2 cuppeeled, grated fresh beet
  2. 1 tbspsherry vinegar
  3. 1avocado, peeled & cubed
  4. 1/2 cupdiced red bell pepper
  5. 1/2 cupthinly sliced radish
  6. 1/2 cupqueso fresco
  7. 1/2 cupfresh cilantro leaves
  8. 2limes, cut into 8 wedges each
  9. 1 lbmed. peeled shrimp
  10. 1/8 tspsalt
  11. 1/4 tspground cumin
  12. 1/4 tspchili powder
  13. 1 tbspolive oil
  14. 8corn tortillas

Cooking Instructions

    Combine beet and vinegar in small bowl. Place avocado, bell pepper, radish, cheese, cilantro and lime wedges into small bowls.

    Combine shrimp, salt, cumin, chili powder and oil in a med. bowl.

  3. 3

    Cook shrimp in a nonstick pan over med. high heat 3 min. on each side, until opaque. Transfer to a serving bowl.

    Place all bowls and the warmed tortillas on the table and allow everyone to build their own taco.
