Ingredients

  1. 4 tbspred wine vinegar
  2. 4 tspsugar
  3. 1/2 tspsalt
  4. 1/4 tspfreshly ground black pepper
  5. 1 mediumcucumber, peeled, seeded, and sliced 1/2 in. thick
  6. 5plum tomatoes, chopped into 3/4 in. pieces
  7. 2 tbspdiced red onion
  8. 2 tspchopped fresh mint

    Combine vinegar, sugar, salt, and pepper. Mix well to combine

  2. 2

    In a separate bowl, combine remaining ingredients.

    Add dressing to vegetables and mix well

  4. 4

    Refrigerate at least 30 min. before serving, mixing occasionally
