Whisk egg whites to form peaks.

Add salt, a big teaspoon of flour and the whitebait. Gently fold to combine

Heat some oil in your pan, then add dessert spoonfuls of the mixture over a medium heat. Cook until golden turning as necessary

Serve with a squeeze of Lemon juice or some Sweet Chilli sauce
