Bring a medium pot to medium high heat. Add your olive oil, garlic and onions. Saute for about 2-3 minutes or until onions start to soften.

After 2-3 minutes add your green peppers and continue to saute for 8 minutes. After 8 minutes add your wine and bring to high heat and reduce wine by 3/4. Then add your vegetable stock and heavy cream and simmer for 20 minutes.

After 20 minutes poor into a blender and blend for 1 minute. Then set aside for later.

In a pot bring 3 cups of water to a boil. Add 8 oz of spaghetti noodle. Boil for 10 minutes or until pasta is al dente.

In a medium pan add 1 tbsp of olive oil onion tomatoes and mushrooms and saute for 5 minutes. After 5 minutes poor your sauce in the pan and mix for 2 minutes. Add pasta into mixture and toss for 5 minutes, add parmesan and parsley and serve.
