Ingredients

  1. 2 tbspOlive oil
  2. 1Chopped onion
  3. 1 tbspCurry powder
  4. 1 literVegetable stock
  5. 1 kgChopped or grated carrots

  1. 1

    Fry onion until tender over a medium heat. Add in carrots and curry powder.

  2. 2

    Stir and coat evenly in powder and oil. Add stock.

  3. 3

    Simmer for 20mins. Blend, adding more water if needed.
