I created this healthy dish without using ready-made curry roux.

Add your choice of chicken, meat and veggies! If you coat the chicken and vegetables in curry powder before sautéing, it will make the soup more aromatic.

  1. For the soup:
  2. 2 tbspCurry powder
  3. 1/2 tspGaram masala
  4. 1 tspCoriander seed powder
  5. 1 tspCumin
  6. 1 tspChili powder
  7. 2 tbspDried basil leaves
  8. 2Bay leaves
  9. 1Chicken consommé bouillon cube
  10. 2 tbspTomato ketchup
  11. 1 tspButter
  12. 2 tbspOlive oil
  13. 1/4Apple
  14. 2 cloveGarlic
  15. 2to 3 slices Ginger
  16. 600 mlWater
  17. Vegetables:
  18. 4pieces Chicken
  19. 4Potatoes, small
  20. 1Green bell pepper
  21. 1Red bell pepper
  22. 1Zucchini
  23. 8Brussels sprouts
  24. 8Baby corn
  25. 16Green beans
  26. 1Onion
  27. 2Eggs

Steps

  1. 1

    Prepare the spices.

    Combine all the spices in a bowl and stir lightly. Heat olive oil and butter in pan, sauté ketchup, add spices, and mix until fragrant.

    Add water, and when the spices have dissolve, add garlic (crushed with the flat of a knife), ginger, chopped apple, bay leaves, chicken bouillon cube, then bring to a gentle boil.

  4. 4

    Heat olive oil in pan, and sauté the chicken. Sauté other vegetables to the desired degree of tenderness.

  5. 5

    Prepare the boiled eggs. Add the chicken and vegetables from Step 4 to the soup from Step 3, and heat.

  6. 6

    Transfer to a bowl and serve!

    The amount of water is approximate. Start with 150 ml per person, then add more to taste. You can use chicken soup, too!
