One of my husbands favorite dishes is Tuscan Short Ribs. I make enough so I can make these eggrolls, combining the tender meat with cheeses for a delicious twist to short ribs!

One of my husbands favorite dishes is Tuscan Short Ribs. I make enough so I can make these eggrolls, combining the tender meat with cheeses for a delicious twist to short ribs!

Ingredients

  1. 4 cupsmy Tuscan Shirt rib recipe meat, bones discarded, recipe in my proile
  2. 2cuos shredded Italian cheese blend
  3. Oil for frying
  4. 1large egg beaten with 1 tablespoon water—egg wash
  5. 10-15eggrolls wraooers
  6. Spicy ranch dressing for dipping, located in my profile

Cooking Instructions

  1. 1

    Combine short rib meat and cheese in a bowl. Either shred or pulse rib meat with some sauce in the food processor.

    Assemble eggrolls

  3. 3

    Lay a wrapper flat in your work surface, brush the edges with the eggwash

  4. 4

    Place some filling on end of wrapper

  5. 5

    Fold over sides

  6. 6

    And roll to enclose filling

  7. 7

    Heat oil in heavy dee[ pan to 350 and fry eggrolls 2 at a time. Until golden

  8. 8

    Sprinkle with Romano cheese while hot

  9. 9

    Serve with spicy ranch for dipping. Mustard sauce is also good for dipping

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
