Citrus Power Chicken Marinade
In the quest of using less store bought items. This marinade came to mind after a trip to my usual Asian Takeaway. This enhances the flavour and body of your chicken while you can still use your usual salt and pepper as dry spices. Ideally, since the soy sauce is a salt component, you should use less salt then usual.

In the quest of using less store bought items. This marinade came to mind after a trip to my usual Asian Takeaway. This enhances the flavour and body of your chicken while you can still use your usual salt and pepper as dry spices. Ideally, since the soy sauce is a salt component, you should use less salt then usual.

First off, cut your lemon and orange in halves.

In a bowl, squeeze the lemon and orange halves into a bowl. Use a fork to get the rest of the juice and pulp out. (For those that don't have a juicer)

In another bowl, using a tea leaf strainer or sieve, pour the juice through the strainer into another empty bowl. You can use a spoon to further crush the pulp in the strainer to release more juice.

Take all your sauces and put them in the juice bowl. Stir them together to fuse them.

And there you go! Use this marinade to marinate your chicken before grilling and or frying. It also helps to cook your chicken in the marinade. It's not too strong either.
