
Mushroom and cheese calzone

Mix warm water, yeast, and honey. Let sit for 5 minutes, then add oil.

Mix together flour and salt. Add wet ingredients.

With a dough hook, beat mixture until ball forms. The dough should be hydrated, but not sticky. If it's sticky, add a little more flour.

Divide the dough. Makes 4 large calzones or 8 small calzones. Make dough balls evenly sized, cover and let rise for 30 minutes.

Preheat the oven to 425 and grease 2 cookie sheets.

Roll each dough ball into a flat circle 1/8th of an inch thick.

Top the circles with sauce, mushrooms and cheese.

Fold the dough in half and pinch the edge on one side. Pierce the dough with a fork once or twice.

Bake 15-20 minutes, until dough begins to brown. Let sit a few minutes before serving.
