Ingredients

6 servings
  1. 200 gramsbeetroot, spicy marinade if you can find it.
  2. 2corn on the cob, canned will do
  3. 1/4 cupolives
  4. 3spring onions
  5. 1 smallcucumber
  6. 2 smallavocados
  7. 1carrot
  8. Dressing
  9. 6good shakes of jalepeno Tabasco
  10. 1 dashneutral oil like sunflower or groundnut
  11. 2 tbspsherry or cider vinegar
  12. 4 tspsmoked paprika and chipotle paste

Steps

15 mins
  1. 1

    Boil or steam the corn.

  2. 2

    Leave to cool, then cut the corn from the cob

  3. 3

    Chop the rest of the vegetables into bitesize pieces

  4. 4

    Mix up the dressing

  5. 5

    Put the veg and dressing in a tupperware and shake.

  6. 6

    Leave to cool in the fridge and serve.
