Ingredients

1 1/2 hours
5-6 servings
  1. 3-4large garlic cloves
  2. 1shallot
  3. Tbsp.Salt
  4. 1/2 tbsp.Pepper
  5. 3 tbsp.Fresh thyme
  6. 1 1/2 tbsp.Dried rosemary I prefer fresh but I was out
  7. 1/2a fresh lemon juiced
  8. 3-4 lb.Boneless pork loin roast

Steps

    Couldn't pass this up $1.99lb. for a center cut. You can use a rib or loin end roast at a even cheaper cost if you prefer.

    Add all your ingredients to a food processor or blender.

    Process untill you achieve a nice and thick paste. Taste and adjust seasoning to your liking. I added some more fresh thyme and did adjust the ingredients above.

    Place your roast on a 3 foot piece of plastic wrap leaving foot or so to one side.

    Now massage your marinate into the roast top bottom all around. This is were latex disposable gloves come in handy you can order them online for a lot cheaper cost then the ones at the grocery store I think you can get 100 pair for about 8 bucks.

    Wrap the extra foot on side you have over the roast and wrap end over end. Fold your sides up and place on another piece of plastic wrap and fold tightly to seal the sides.

    Place in your refrigerator and let marinate for 2 1/2 hours your really do not want to go much longer because the lemons acidity will start to cook your meat kinda like you would for a ceviche.

    Those where two corned beef in the back of my fridge i couldn't pass those up either. Me and my mom laugh about it all the time it's like a disease we have with on sale products especially when the pull dates are good I can't resist lol!!!

    Preheat oven to 450 degrees and take your roast out of you fridge and let it sit out for the last 1/2 hour of the marinating process.

    Place the roast fat side up on a sheet pan with a rack. If you have a leave thermometer insert into the middle of the roast and set it to 150 degrees. Now the browning process Place the roast in the center of your oven with the oven rack in the middle position and roast at 450 degrees for 25-30 mins checking at the 15 min mark for nice color don't want to burn it.

    Now reduce the heat of your oven to 275 degrees and bake for about an hour or so untill you reach 150 -155 degrees. If not using a leave in thermometer check with a instant read thermometer at the 45 mins mark. At this temperature it's about 8-10 mins per every 10 degrees so plan your sides accordingly.

    Cover loosely with tin foil and let rest for 10 mins.

    Plate and pour a little of the accumulated pan dripping over the top for extra flavor.
