This was a family favorite growing up. Very cheap, quick and easy, and extremely good (my sisters say better) when it's leftover.

Soak dried red beans overnight, then drain.

Chop sausage into half circles, about 1/4 in thick
- 3
Choose green bell pepper into small squares.

Place all ingredients in a large soup pot filled half full of water.

Simmer on low for 5 hours, stirring every hour or so
- 6
Serve over white rice, and with French bread. Season with Tabasco sauce.
