What's in the fridge: story of my life every morning. This turned out to be a delightful breakfast / brunch.

POACHED EGG: Heat a saucepan with water until it's almost boiling. Lower the heat, crack the egg open and gently drop it to the water. Use a spoon to nudge the egg white closer to the yolk. Add a pinch of salt if desired. Let it simmer for 2-3 minutes and don't overcook the yolk. The runny yolk adds to the taste.

Toast the seeded or brown bread. Spread the hummus and top with the poached egg.

Fry the pancetta or bacon cubes for a minute or two, then add to the poached egg. Top with ground pepper and parsley if desired.
