Ingredients

  1. 1 tbspolive oil
  2. 1onion, chopped
  3. 2 cuparborio rice
  4. 400 gramspumpkin, peeled and diced (2cm cubes)
  5. 5 cupvegetable stock
  6. 60 gramsbaby spinach
  7. 1/2 cupromano cheese

    Heat oil over medium heat. Add onion, cook for 3 minutes.

  2. 2

    Add rice, stir to coat for 1 minute.

  3. 3

    Add pumpkin.

  4. 4

    Add 1 cup stock and cook, stirring, until stock is absorbed.

  5. 5

    Reduce heat to low. Keep adding 1/2 cup stock at a time until rice is cooked.

  6. 6

    Stir in spinach until wilted. Stir in cheese. Season and serve with extra cheese.
