On high heat, add sesame oil or vegetable oil (your preference) into the pan. Add the chinese sausage. Fry until ready, remove from pan and chop into pieces. Add the rice.

In a bowl, add eggs and soya sauce. Whisk until watery.

Turn down to medium heat. Stirfry the rice. Add the egg mixture, salt and sugar. Stir for 1 minute then add the chinese sausage, peas and carrots. Add a bit of ketchup for flavour and to prevent dryness. Stir until ready.
