Perfect sautéed jack fruit seeds

Its jackfruit season! And it would be a waste to throw away the seeds, they taste so good, soft and creamy almost like a sweet potato. I remember when I was little my mom would keep the jackfruit seeds under a bed of hot ashes of a burning fire and roast it. It tastes so good. Wonder if anyone uses the old fashioned methods anymore.
Anyway if anyone else comes up with a better recipe please share 😊 I will very much appreciate it.

Boil the seeds for 20-30 mins or simply pressurize it in a pressure cooker for 5-10mins.

Check if the seeds are cooked by simply pushing a fork or a knife it should go easily. Peeling the seeds is not a tough job. Some seeds crack open or with the help of a knife cut into half and open the thin transparent outer husk.

Heat pan add ghee/salted butter, add the onions, fry for a couple of minutes. Add the jackfruit seeds stir fry for another 5minutes in high flame and season with salt.
