How can we get our kids to enjoy foods they usually don’t like and prefer over eating out? The answer is simple: it’s all about presentation! Their eyes need to enjoy the food before their taste buds do. Try adding something extra or decorating their plates in a way that catches their attention and appeals to them. Dishes like frittatas and stews often don’t attract kids, and some even refuse to eat them. Many kids also avoid fish because they’re afraid of finding bones. You can give them boneless fish, and little by little, they’ll start to enjoy these nutritious foods that help build strong bones. In Spain, egg frittatas are a staple meal for kids—eggs with a bit of olives, tomatoes, and some herbs. I’m sharing this forgotten recipe because it’s quick to make and kids will love it, while still enjoying authentic Middle Eastern flavors. This recipe includes garlic and hot peppers for adults, but you can leave them out for kids. A little garlic in kids’ food can even help prevent the spread of illnesses at school. I made this frittata with lunch meat, but you can use pastrami, leftover fish, or any leftover meat from the day before. This recipe works for any budget and you can use whatever you have in your kitchen.

Steps

  1. 1

Chop all the ingredients and mix them together.

  2. 2

Crack the eggs directly into the pan over the other ingredients without beating them, so the yolks stay whole (like sunny-side up).

  3. 3

Let it cook until the frittata is soft—this is best for kids.

  4. 4

Serve it to the kids just like this.

  5. 5

For adults, sauté all the vegetables in oil first, then add the eggs in the same way.

If you can, flip the frittata to cook both sides.
