Preheat oven to 425°F

Tenderize chicken breast and thin out

pour 1 tb eevo into baking dish and spread around

salt and pepper chicken and place in dish

top chicken with pesto, then layer tomato slices on top

in a small bowl mix 2 tbl eevo and almond meal until the almond meal comes together

Add almond meal mixture to the top of the tomato slices

sprinkle with eevo lightly

bake covered for 15 minutes, then 5 mins uncovered
