Crab in Hot Chili Sauce (Saus Padang)

I know that the simple yet delicious way to enjoy the fresh sweet taste of crab meats are just boild it and make some dipping sauce. But, here in Indonesia, the favorite way to enjoy it is to cook it with a hot sauce that called 'saus padang'. You can easily get this menu at seafood restaurant or tent. 😙😋

In other way, if you didn't get crab spawn, you can add more water and adding mixture eggs into the sauce.

  1. 3 largefresh crab spawn
  2. 1 cuplemon juice
  3. 2 tbspmilled challott
  4. 1 tbspmilled garlic
  5. 1/2 tbspmilled ginger
  6. 3 tbspmilled red pepper
  7. 3citrus
  8. 1 mediumonion, chopped
  9. 2 stickleeks
  10. 1 tbspcooking oil
  11. 1 cupwarm water
  12. salt
  13. pepper
  14. white sugar

  1. 1

    First of all, clean the crabs and split into two parts. (I ask the seller to do it, so I don't need to mess up the kitchen.) Pour the lemon juice over the crabs and put a side.

    Take a clean bowl and mix well all the milled ingredients.

    Prepare a large pan (or whatever large enough for all the crab), add cooking oil. Saute the milled mixture, stir until fragrance. Then, add torn citrus leaves and chopped onion. Mix well.

    If all the ingredients has cook, add warm water, salt, pepper, white sugar and leave it into boild. (Don't forget to taste it and customize to yours.)

    Then add the crabs into the pan, leave the lemon juice.

    Cook until the crabs turn into red.

    Add the slice of stick leeks. And stir well.
