When you feel like changing your menu f rom grilled chicken/ deep fried one, try this chicken stew and feel the change. Goes well with Chapati, Rice, mashed potatoes, mashed matoke, irio (Mukimo)just to mention a few. Can as well have it the way it is.
Steps
- 1
Clean your chicken and boil it with less water for 10 mins. (you can opt not to boil it and just fry it direct). The choice is yours.
- 2
As you boil it, prepare other ingredients. I.e chop onions, tomato and also grate garlic n ginger n set all aside.
- 3
In a frying sufuria, add 3/4 tablespoon cooking oil n let it heat abit. Add in your onions n let them brown.
- 4
Add tomatoes, green pepper and stir well then reduce the heat. Put salt and add in your grated garlic n ginger.
- 5
Add 1/2 cup of water and bring to boil.
- 6
After 10 mins of boiling chicken, remove it and put it in the sufuria with other frying ingredients. Mix it well with other stuffs n let it cook with a moderate heat.
- 7
Once almost ready, like 5 mins before removing it, add in your cougettes. Note; courgettes should never be cooked fully.
- 8
After those 5 mins, remove it n serve it hot with any accompaniment of your choice. Bon appetite.
