Ingredients

  1. 2Sweet Potatoes
  2. 2Yellow Onion
  3. 5 cloveGarlic
  4. 1Green Pepper
  5. 1Red Pepper
  6. 1 packagesMushrooms
  7. 4Jalapeños
  8. 1 canDiced Tomatoes with Peppers
  9. 2 canDiced Tomatoes
  10. 1 cantomato paste
  11. 1 canRed Kidney Beans
  12. 1 canPink Kidney Beans
  13. 1 canBlack Beans
  14. 1 canCorn Niblets 8 oz
  15. 6 cupVegetable Broth or Water
  16. 2 tbspOil of choice
  17. 5 tbspChili Powder
  18. 1 tbspground cumin
  19. 2 tbspDried Oregano
  20. 2 tbsppaprika
  21. 1/4 cupworcestershire sauce
  22. 2 tbspsoy sauce
  23. Toppings
  24. 1sour cream
  25. 1cheddar cheese
  26. 1scallion

  1. 1

    Preheat oven to 500. Chop All Veggies, Mince Garlic.

  2. 2

    Place Jalapeños in oven safe dish and drizzle with oil. Put in Oven for 15 minutes. Once roasted, dice (remove the seeds if you want less heat) and save for later.

  3. 3

    Put a large pot (5 Quart) on med high heat. Add oil. Add the sweet potatoes, onion, and peppers. Sweat for 5 minutes.

    Add mushrooms, jalapeños & garlic. Cook 2 minutes

  5. 5

    Add all cans and spices. Stir and cook 2 minutes.

  6. 6

    Add remaining ingredients. Bring to a boil. Turn down heat to med-low and simmer until thick. 45 minutes minimum.
