Cooking Instructions

Beat eggs in a bowl large enough for you can dip the sliced eggplants in. Add salt.

Cut eggplant into thin circles about 1/8th inch thick. Soak slices in egg bath.

Pour 1/4th cup oil into frying pan reserve rest should you need more as you go along.

Once oil is heated, fry eggplant until golden brown on both sides. About 2mins.

Crush both garlic cloves, mix in with mayo.
- 6
Spread mixture onto eggplant like you're making a sandwich.

Cut tomatoes into thin slices place on top of eggplant. Add fresh basil leaf, or basil spread. Cut mozzarella into thin slices, and place over basil.

You may top with another slice of eggplant, and secure it with a toothpick, or serve as is, open faced.

I make this with all the children's hard boiled eggs from the Easter Holiday every year and also sometimes in between when we are just craving it! I am a fan of miracle whip's flavor however, I will use mayonnaise if that's what I have. I also normally use celery seed as I enjoy the flavor of that as well. However, I've been out of that spice lately so I decided to substitute chia seeds and it worked just fine! You can also substitute any onions you have for the green ones. This is great on bread, in wraps, & even on crackers! (*Note: this recipe is written with eggs already hard boiled, if you need to boil them first, you will need to add 10-15 mins to your cook time.)
