A great treat if you want to have a filling, healthy meal. You can sub in the meat for a vegetable mixture as well.

A great treat if you want to have a filling, healthy meal. You can sub in the meat for a vegetable mixture as well.

Preheat oven to 375°F

Pour water into a small or medium pot. Add rice and keep on high until at a boil. Stir occasionally, keeping it at a boil until rice reaches desired softness.

In a pan, heat med-high, and cook sausages until fully cooked.

Once the rice is done, drain, keeping the rice in the pot. Then add coconut milk and stir. Leave on stove at a light simmer until coconut milk is fully absorbed. You can add more to taste.

Gut out tomatoes as much as possible. Put one slice cheese on bottom, fill with diced sausage, then top with one slice cheese.

Put stuffed tomatoes, in an aluminum pan, in oven. Bake until cheese is melted on top.

In a large saucepan, combine rice and pineapple chunks on medium heat. Stir often to mix ingredients. Add salt and pepper to taste.

To plate: put rice in the center of the plate to a desired amount. Add one stuffed tomato on top. Add salt and pepper to taste. If there is some sausage left over, slice and put on rice behind tomato.
