Ingredients

  1. 1 1/2 cupGluten free flour (if the flour doesn't have xanthan gum, add 3/4 teaspoon)
  2. 1/2 tspFine sea salt
  3. 1 tspBaking powder
  4. 1 cupAlmond butter
  5. 1 cupMaple syrup
  6. 1 tspVanilla extract
  7. 1/2 tspMaldon sea salt (or fleur de sel or any coarse sea salt you have in hand)

    Preheat the oven to 350°F and line 2 baking sheets with parchment paper.

    Whisk the flour, fine sea salt, and baking powder. In a separate bowl, whisk together the almond butter, maple syrup, and vanilla. Thoroughly combine the wet and dry ingredients. Using 2 spoons, firm the cookies into small balls (about 1 generous tablespoon) and space them 2 inches apart in the prepared sheet pans. Wet toe fingertips and press down on each cookie, smoothing the edges so each is a nice little disk. Sprinkle with just a bit I the maldon salt.
    Bake until the air is fragrant and the cookies are just firm, 10-12 minutes. Let cook before serving.
