I absolutely love all these ingredients and when they are stacked on top of each other they create something magic :-). A really good way to use up older vegetables and you will have some ratatouille left over for more meals (eg on a baked potato or with pasta in the following days)

Ingredients

20-25 minutes
2 people
  1. 4 slicessourdough bread (but can also be just normal bread)
  2. 4eggs (ideally free range)
  3. 2tomatoes
  4. 1courgette
  5. 1onion
  6. 2 clovesgarlic (cut or mashed)
  7. 2peppers (nice if different colours)
  8. 1Aubergine (optional)
  9. 1Avocado
  10. 1 tinchopped / plum tomatoes
  11. 1 tspPaprika (smoked or normal)
  12. 1 pinchchili flakes (optional but does make it :-))
  13. 1 tbspolive oil or equivalent to fry with (not extra virgin)
  14. 1/2 cupwater
  15. Some grated cheddar to taste (optional)
  16. Salt & pepper

Steps

20-25 minutes
  1. 1

    Cut the onions as you want them and fry for a few minutes to brown them in the oil.

  2. 2

    Add the cut up tomatoes, courgette, peppers, aubergine and water. Keep the heat high. As the water boils off, add the paprika, garlic and tinned tomatoes. Then turn the heat down to a simmer for 15-20 minutes (stirring as needed to stop any burning).

    While the ratatouille is simmering, open the avocado and mash it with the chilli flakes, a little olive oil and salt/pepper to taste.

    Toast the sourdough and when done, spread the avocado on it as you would butter.

  5. 5

    Fry the eggs so they have nice runny yolks. Add a little freshly grated pepper on top if you like pepper :-)

  6. 6

    Put the ratatouille on the avocado covered sourdough, the eggs on the ratatouille and then sprinkle with grated cheddar (Optional)

I have always loved cooking as its a great way to show people you care for them. This is especially important for your kids and it also gives them the confidence that cooking is easy and fun.I believe in using good local ingredients when possible as this can definitely be tasted. I also believe that nothing should be wasted so any leftovers are stored or frozen for subsequent meals.
