For The Pudding: Beat together the sugar replacement/melted honey until light and creamy

Add jam and mix until evenly incorporated.

Melt the butter and add to the egg mixture along with vinegar.

Mix together the flour, baking soda and salt and sift over the egg mixture, add the milk and mix well.

Pour into shallow prepared oven-proof dish and bake at 180°C for 40 minutes.

For The Sauce: place all the ingredients into a small pot and melt over a low heat. Pour over sponge pudding as soon as it comes out the oven. Leave to stand for 15 minutes before serving.
