Ingredients

  1. the pudding:
  2. 200 mlhoney or sugar replacement
  3. 2eggs
  4. 1 tbspLow Fat/Weigh-Less apricot jam
  5. 150 gramscake flour
  6. 1 tspbaking soda
  7. 1/2 tspsalt
  8. 1 tbspbutter
  9. 1 tspvinegar
  10. 1/3 cuplow fat milk
  11. the sauce
  12. 75 gramsbutter
  13. 150 gramssugar
  14. 90 mlhot water
  15. 2 tspvanilla essence
  16. 200 mllow fat milk

    For The Pudding: Beat together the sugar replacement/melted honey until light and creamy

  2. 2

    Add jam and mix until evenly incorporated.

  3. 3

    Melt the butter and add to the egg mixture along with vinegar.

  4. 4

    Mix together the flour, baking soda and salt and sift over the egg mixture, add the milk and mix well.

  5. 5

    Pour into shallow prepared oven-proof dish and bake at 180°C for 40 minutes.

  6. 6

    For The Sauce: place all the ingredients into a small pot and melt over a low heat. Pour over sponge pudding as soon as it comes out the oven. Leave to stand for 15 minutes before serving.
