Ingredients

2-4 servings
  1. 5medium red skin potatoes, boiled in salted water until just tender
  2. 1 lbpolish kielbasa sausage, added to boiling potatoes for the last 5 to 10 minutes to heat and plump up
  3. reduction sauce
  4. 1/3 cupwhite wine
  5. 8 ozlow sodium chicken broth
  6. 3 cloveminced garlic
  7. vinaigrette dressing
  8. 1/4 cupseasoned rice vinegar
  9. 1 tspdijon mustard
  10. 3 tbspolive oil
  11. 1/4 tspdried tarragon
  12. 1 tbspchopped fresh parsley
  13. 2 tbspfinely chopped onion
  14. 1/2 tspblack pepper and salt to taste
  15. 1 tsphot sauce such such as Frank’s brand
  16. toppings
  17. 1/4 cupdiced swiss cheese, or any cheese you like
  18. 3sliced green onions

    MAKE VINAIGRETTE: Whisk all ingredients in a bowl to mix well.

    MAKE REDUCTION SAUCE: Combine all ingredients in a saucepan and reduce over medium high heat until reduced to about 1/2 cup, about 5 to 10 minutes.

    Slice warm peeled potatoes 1/4 inch thick. Slice warm kielbasa in 1/4 inch slices. Gently combine with warm reduction sauce be careful not to break potatoes.

    Arrange potatoes alternating with kielbasa in a decorative way on rimmed platter. Pour vinaigrette over evenly. Top with cheese and green onions, serve warm. To melt cheese if everything has cooled heat a minute or two in microwave.

    This can be made ahead and kept chilled, just heat until warm in microwave before serving, its best warm.

    In my picture here I served it with omelette baked tomatos for a brunch. Enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
