Cheesy Broccoli Bites

Cooking Instructions

Heat oil to 350°F

Beat eggs until well blended. In large bowl, add all ingredients except panko crumbs.

Add beaten eggs to dry ingredients and mix until well combined. Refridgerate for 1 hour.

Form bite size balls and roll in panko crumbs to coat all the pieces well. Make sure they are fully coated all the way around pressing into balls to ensure crumbs are stuck good in balls.

Deep fry a few at a time until golden brown. About a minute or so. Drain on paper towel. Sprinkle with salt when fresh out of oil if desired.

Dipping Sauce:

Mix first three ingredients for dipping sauce located in the ingredients list.

Slowly add honey and lemon juice. Mix until smooth and refrigerate. I like to make this a day ahead and sit overnight so the flavors have time to meld together.

This is my take on a cheesy broccoli casserole, perfect for a holiday meal side dish. It has no condensed cream soups and no velveeta, so I feel better about making it for my family. I use fresh broccoli florets when I make this, but I'm sure frozen could be used too. Or you could also make this with cauliflower. For the topping, you could substitute crushed up Ritz crackers or just panko breadcrumbs instead of the French onions, if you'd like. Christina -
