  • 3 tbspbutter
  • 1/4 cupchopped fresh mushrooms
  • 2 tbspchopped onion
  • 2 tbspchopped celery
  • 2 tbspchopped carrot
  • 1/4 tspsalt
  • 1/4 tspcayenne pepper
  • 1 1/2 cuphalf-and-half
  • 1/2 cupdry white wine
  • 1/2 lbcooked lump lobster meat
  • 1 can(14.5 ounce) clam juice
  • 1 cansmall tomato paste

  1. 1

    Melt butter in large saucepan over medium-low heat

  2. 2

    Add mushrooms, onion, celery and carrot.

  3. 3

    Cook and stir until tender, about 10 minutes

  4. 4

    Stir in clam sauce and season with salt and cayenne pepper

  5. 5

    Bring to boil, then simmer for 10 minutes

  6. 6

    Pour vegetable and broth mixture into blender, adding 1/4 cup of lobster meat

  7. 7

    Cover, process until smooth

  8. 8

    Return to saucepan, and stir in half-and-half, white wine, tomato paste, and remaining lobster meat

  9. 9

    Cook over low heat, stirring frequently until thickened, about 30 minutes
