Ingredients

6 servings
  • 1 lb85/20 ground beef
  • 1/2 eachred bell pepper, finely chopped
  • 1/2 eachgreen bell pepper, chopped
  • 1/2 eachonion, chopped
  • 1 tspgarlic, minced
  • 1/4 cupfresh parsley, finely cut
  • 1 eachsalt, pepper, garlic powder, onion powder to taste
  • 1 can8 oz tomato sauce
  • 1 eachegg
  • 1/2 cup-1/3 italian bread crumbs
  • 1 eachcubed colby jack cheese, small
  • 1/2 cupketchup
  • 1 tbspmustard
  • 1 tbspbrown sugar
  • 1 dashonion powder and salt to taste

Steps

    »heat oven to 400°

  2. 2

    »generously grease (12-15) muffin tins

  3. 3

    »in a large bowl, combine the first 10 ingredients

  4. 4

    »fill muffin tins about 1/2 way fun with meatloaf mixture. with a spoon make a hole in the center and put a couple of the cheese cubes inside.

  5. 5

    »top with more of the meatloaf mix and seal up like a "muffin"

  6. 6

    »make the glaze. in a bowl mix together the ketchup, mustard, brown sugar, onion powder and salt.

  7. 7

    »put about a spoonful of the glaze onto each muffin.

    »bake about 45 mins and reglaze. bake for 15-20 mins more.

    »serves 6-8

    »can also make one loaf, cooking time will vary.
