Ingredients

  • 2 tbspolive oil, extra virgin
  • 2 cupseasoned bread crumbs
  • 2 cupgrated parmigiano reggiano or pecorino romano cheese
  • 4eggs
  • 12cleaned and trimmed chicken thighs (skin on, bone in)
  • 1/2 tspcoarse salt
  • 1freshly ground black pepper

    Preheat oven to 425. Spread olive oil, evenly over the surface of a large baking dish or sheet pan.

  2. 2

    Combine bread crumbs and grated cheese in a large bowl. Beat eggs in a separate bowl.

  3. 3

    Rinse chicken thighs and pat dry. Sprinkle with salt and pepper. Dip in egg mixture, then bread crumb mixture. Coat thoroughly, pressing crumbs into thighs. Place skin side up in prepared pan.

    Bake 45-50 min. until golden brown. Remove from oven and let stand 10 min. before serving.
