Ingredients

  • 4boneless skinless chicken breast, cubed
  • 5potatoes, cut into 1/2 in cubes
  • 1/3 cupolive oil
  • 1 1/2 tspsalt
  • 1 tsppepper
  • 1 tbsppaprika
  • 2 tbspgarlic powder
  • 1TOPPING
  • 2 cupmexican blend cheese
  • 1 cupcrumbled bacon
  • 1 cupdiced green onion

Steps

  1. 1

    Preheat oven 400°

  2. 2

    In a large bowl, mix oil, salt, pepper, garlic powder and paprika.

  3. 3

    Add the potatoes and chicken and stir to coat.

  4. 4

    Add to greased pan and bake for 55-60 minutes, stirring about every 20 minutes.

  5. 5

    While the chicken and potatoes are cooking, fry the bacon and crumble.

  6. 6

    Once the chicken and potatoes are fully cooked, remove from oven and add cheese and bacon and green onions.

  7. 7

    Bake for additional 5 minutes.

  8. 8

    Serve and enjoy!
