PREHEAT oven to 350°F for metal or glass pans, 325°F for dark or coated pans.

GREASE sides and bottom of pan with shortening.

FLOUR lightly.

BLEND dry mix, buttermilk, butter, eggs, and lemon flavouring in large bowl at low speed until moistened (about 30 seconds).

BEAT at medium speed for 2 minutes.

POUR batter in pan and bake immediately.

BAKE for 32-35 minutes in a 13 x 9-INCH pan; 38-43 minutes for Bundt® pan. (Add 3-5 minutes to bake time for dark or coated pans.)

MIX cream cheese, confectioner's sugar, and 1 tablespoon lemon flavouring to prepare frosting while cake bakes.

REMOVE cake from oven.

COOL in pan for 10 minutes.

FROST while still warm to allow frosting to seep into cake.
