Ingredients

3 lbFish
3/4 cupKosher salt
1 quartWater
3 cupVinegar
1 cupWhite sugar
2 cupVinegar
1 cupWater
1/2 cupSweet vermouth optional
1 eachMedium onion
1 tspDill weed
1/2 tspCr red pepper

Steps

Combine 3/4 cup salt and one cup water and soak fish 24 hrs , drain but don't rinse . Soak in white vinegar 24 hrs for 24 hrs , rinse but don't drain.

Make brine : 1 c sugar , 2 c white vinegar , 1 c water and vermouth if desired
