Ingredients

  1. 3 lbFish
  2. 3/4 cupKosher salt
  3. 1 quartWater
  4. 3 cupVinegar
  5. 1 cupWhite sugar
  6. 2 cupVinegar
  7. 1 cupWater
  8. 1/2 cupSweet vermouth optional
  9. 1 eachMedium onion
  10. 1 tspDill weed
  11. 1/2 tspCr red pepper

Steps

  1. 1

    Combine 3/4 cup salt and one cup water and soak fish 24 hrs , drain but don't rinse . Soak in white vinegar 24 hrs for 24 hrs , rinse but don't drain.

  2. 2

    Make brine : 1 c sugar , 2 c white vinegar , 1 c water and vermouth if desired
