Microwave 2 potatoes at a time for 7 min.

Cut semi-cooked potatoes in half, and hollow out all but a half an inch from the skins.

Fry skins in a deep fryer for 3-4 minutes until golden, then drain on paper towels.

Place fried skins on a cookie sheet, top with cheese and bacon, and bake at 400°F for 20 min or until cheese is melted.

Serve warm and top with sour cream and chives
