  1. Pumpkin soup
  2. 1/2medium pumkin
  3. 4 clovegarlic cloves chopped
  4. 1shallot chopped
  5. 1red onion chopped
  6. 1onion, chopped
  7. 1 largepotato
  8. 2 largecarrots
  9. 500 mlveg stock
  10. 1 1/2 tbspmolasses sugar
  11. 2 1/2 tbspcoconut oil melted
  12. salt
  13. 1 1/4 tspground nutmeg
  14. 200 mlcoconut cream milk
  15. 1 bunchbasil
  16. 1 bunchcoriander

Steps

20 mins
  1. 1

    Cut pumpkin in half and de-seed (bake seeds for later!)

  2. 2

    Chop carrots, onions, shallot and garlic and add to pumpkin

  3. 3

    Mix sugar with oil and mix in with veg mix and add pinch salt

  4. 4

    Cover with foil and bake 220ºc for about 40mins untill soft

  5. 5

    While pumpkin is baking place stock in large pan and bring to boil

  6. 6

    Add potato and simmer untill soft (20 mins)

  7. 7

    When pumpkin is done scoop out everything inside pumpkin and add to stock mix

  8. 8

    Puree untill soft return to low heat

  9. 9

    Add cream nutmeg and basil, coriander and add salt to taste if needed

  10. 10

    Blend again and serve :)
