Ingredients

30-35 minutes
2-3servings
  • 1 cupgrated lauki
  • 1 tbspghee
  • 2.5 cupmilk
  • 1 pinchsaffron strands (kesar)
  • 1/4 tspcardamom powder (choti eleichi)
  • 5 tbspsugar
  • 1-2 tsprose water (optional)
  • 12-15Cashews (kaju)
  • 1 tspRaisins (kishmish)
  • For garnishing 3-4 dates or munakka

Steps

30-35 minutes
  1. 1

    Rinse, peel and grate lauki..

  2. 2

    In a thick bottom pan, heat 1 tbsp ghee.. Add lauki stir the lauki well, saute it for 5-6 minutes on a medium flame..

  3. 3

    Then add 2.5 cup milk and stir after 5-6 minutes add a pinch of saffron strands..

  4. 4

    Continue to simmer milk till it comes to a gentle boil.. Keep on cooking milk till it's reduced a beat.

  5. 5

    Overall cook the milk for 15-20 minutes. Once the milk has reduced add 4 to 5 tbsp sugar..Then add cardamom powder,cashews...

  6. 6

    Simmer lauki kheer 5-6 minutes more switch off the flame add 1-2 tsp rose water..

  7. 7

    Ready to serve Lauki kheer hot or chilled..
